Ramen Haruki’s porkbone shoyu ramen (shio[salt] option also available) is made with a brothprepared from roasted pork backbone that is richbut subtly flavored, so you’ll drink every drop. Therich tsukemen dipping noodles combining seafoodumami and pork bone robustness are also highlyrecommended.
The restaurant’s standard menu item is soy sauce ramen (salt ramen is also available), which is popular for its mild taste that allows you to finish every last drop, despite the rich, thick soup made from back bone stock.
